整間店只有一樣東西是亮的：那道木檯。
牆是黑的粗面，隔屏是直立的木條，地上嵌一條黑石子，走進來得先經過它。
光全部給了那道檯面——照手、照刀、照剛放下的那一盤。
吃日料是看著人做給你吃。除了那雙手，其他地方都可以暗。
Project story
One thing in this restaurant is lit: the counter.
The walls are black and coarse, the screens are upright timber battens, and a line of black pebbles is set into the floor so that you cross it on the way in.
All the light is given to the counter — to the hands, the knife, the plate just set down.
You come to a place like this to watch someone make your food. Apart from those hands, everything else is allowed to be dark.
